100g of Greek Feta Cheese

1 tsp Dried Oregano

Method:
- Prepare the cucumber: Halve the cucumber lengthwise. Scoop out the seeds with a spoon. Slice the cucumber into crescent moon shapes.
- Prepare the pepper: Slice the bell pepper into rings. Remove the core and seeds from the centre. Quarter the pepper rings.
- Prepare the tomatoes: Core and quarter the tomatoes.
- Prepare the onion: Peel the red onion and thinly slice it.
- Prepare the parsley: Pick small sprigs of fresh parsley.
- Prepare the olives: Drain the Kalamata olives and place them on a paper towel to remove any excess moisture.
- Assemble the salad: In a large salad bowl, arrange the sliced cucumber, pepper rings, tomato quarters, red onion, and parsley.
- Dress the salad: Drizzle a generous amount of Jorge Oregano Olive Oil over the salad. Season with salt and pepper to taste.
- Finish the salad: Break the feta cheese into crumbles over the salad. Sprinkle with dried oregano.
